My sister-in-law Debbie, sent me a family favorite recipe of Rice Pudding with Raisins. Being a Filipina, all of our best dessert recipes have rice in them in one manner or another. There was only one small change in the recipe and that was not using instant rice!

Ken has told me that his mom made Rice Pudding (Lice Pudding) is what he called it for a laugh. He was saying it was always a very enjoyable dessert. So, I asked for the recipe to share here with all of you!

Though this is made with white rice which has had many of the fabulous nutrients removed in the grind and polishing process it is still reasonably healthy food. Rice pudding offers the body many important vitamins such as

  • Vitamin B1
  • Vitamin B2
  • Potassium
  • Magnesium and many more.

Ingredients

  • 1 cup Jasmine Rice

  • 2 1/2 cups milk (Almond or other Plant-Based Milk works as well)

  • 3/4 cup Sugar

  • 1 ea Egg Yolk

  • 3/4 cup Golden Raisins

  • 1 tsp. Vanilla

  • 3/4 tsp. Cinnamon Powder

  • 3/4 tsp Nutmeg

  • 1 tsp butter

Directions

  • Make the rice first – Follow the video on our Youtube Channel
  • Add the Milk, Sugar, and Egg Yolk bring it to a boil ensuring you stir it constantly
  • Once boiling remove it from the heat and add Raisins, Vanilla, Cinnamon, nutmeg, and butter
  • Mix it well together and let it cool. Store in the refrigerator and then serve.
